Always Allowed: The Carnivore Core

Beef: All cuts. All forms. Ribeye, ground beef, brisket, short ribs, chuck roast, oxtail. Organs -- liver, kidney, heart, tongue, brain, marrow. Grass-fed and grass-finished preferred for the fatty acid profile and CLA content.

Lamb: Particularly rich in CLA. Chops, ground lamb, rack of lamb, lamb shoulder, lamb liver.

Pork: Belly, chops, shoulder, ribs. Bacon and pork rinds with no added sugar or plant ingredients.

Poultry: Chicken thighs and legs (skin-on, bone-in preferred for fat), turkey, duck.

Fish and seafood: Salmon, sardines, mackerel, and herring are particularly valuable for omega-3 content. Cod, tuna, shrimp, oysters, scallops.

Eggs: No limit. One of the most complete foods available.

Animal fats: Tallow, lard, duck fat, bone marrow, butter, ghee. Primary calorie sources, not condiments.

Organs: Liver is the most important food on this list. Heart, kidney, brain, tongue, sweetbreads. The community consensus: include liver at least twice a week.

Allowed With Consideration: Dairy

Butter and ghee: yes for almost all practitioners. Heavy cream: yes for most. Hard aged cheeses: yes for most. Soft cheeses, milk, yogurt: more variable -- contain more lactose and casein that some people react to. Standard recommendation: eliminate dairy for 30 days, then reintroduce and observe.

Not Allowed: All Plant-Derived Foods

Vegetables, fruits, grains, legumes, nuts, seeds, seed oils, sugar, honey, spices (most), coffee (strict carnivore), alcohol. The line is clean: if it did not come from an animal, it is not on the list.
